Cranberry Bundt Cake with Lime Pecan Drizzle


Cake:  Preheat oven to 375˚, Lightly grease a Bundt pan. 

  • 2 TBS. Butter

  • 1 tsp. Vanilla

  • 3 tsp. Baking Powder

  • 1 cup (Lu Austin) Cranberry Butter

  • ½ cup Coconut (optional)

  • 1 cup Sugar

  • 2 cups Flour

  • ½ tsp. Salt

  • 1 cup Milk

Cream the butter, sugar, and vanilla. Sift together dry ingredients and add to the creamed butter and sugar mix, alternating with the milk. Fold in the cranberry butter and coconut, pour mixture into Bundt pan and bake for 30 to 35 minutes. When done remove from oven and let cool 10 minutes and remove from pan.

Topping: Lime Pecan Butter Sauce

  • ½ cup Butter

  • ½ cup Brown Sugar

  • Juice of 1 Lime (1/4 cup)

  • Grated Lime Zest

  • 1TBS. Dark Rum or rum extract

  • ¼ cup dried Cranberries

  • ¼ cup Pecan pieces

  • 2TBS. Coconut (Optional)

Combine Brown sugar, butter, lime juice, lime zest, and rum in a small saucepan. Bring to a simmer and cook 1 minute stirring constantly until brown sugar is dissolved. Remove from heat Stir in pecans, dried cranberries, and coconut. Drizzle over cake letting it run down the inside and outside of the cake. Serve alone or with a touch of whip cream.
