Grilled Orange Glazed Chicken

  

  • 2 - 3 pound broiler-fryer chicken, cut into pieces

  • Canola oil

  • Salt and Fresh Ground Pepper

 

Glaze:

  • 3/4 cup Lu Austin's Orange Marmalade

  • 1 TBS. White Wine Vinegar

  • 1 TBS. + 1 tsp. Country Style Dijon Mustard

 

Use Indirect Grill Method:


Rinse chicken pieces in cold water and pat dry with paper towels. Brush each piece with canola oil and season with salt and pepper. Place chicken pieces on cooking grate directly above drip pan and cook for 50 to 60 minutes. While the chicken is cooking mix all the ingredients for the glaze together. Ten minutes before the chicken is done brush each piece with the orange glaze. Once the glaze has started to caramelize remove the chicken from the grill and let it rest for 5 minutes before serving. Serve with rice and roasted vegetables.
