Lu Austin Jam Crostata

  

  • 1 1/2 cups All-Purpose Flour

  • 1/2 tsp. grated Lemon Peel

  • 2 TBS. Sugar

  • 1 1/4 sticks Butter, chilled and cut into chunks

  • 1/4 tsp. Salt

  • 3 TBS. Ice Water

  • Flour for Dusting

  • 1 jar Lu Austin's Jam or Preserves (Strawberry, Wild Blueberry Citrus Jam, or Dutch Apple Jam)

  • 1 TBS. Lemon Juice

  • 1/2 cup Toasted Nuts (Pecan pieces or Slivered Almonds

In a large bowl mix the flour, sugar, lemon peel, and salt together. Cut the butter in and mix until it resembles a crumbly corn meal. Add the water, one tablespoon at a time, until the mix comes together in moist clumps. Gather the dough into a ball and flatten into a small disc. Wrap the dough in plastic wrap and chill until firm about 45 minutes.

Preheat the oven to 400° degrees. Roll out the dough on a floured surface to an 11 inch round. Transfer the dough onto a baking sheet that has been lined with parchment paper. Stir the lemon juice into the jam of your choice and spread the jam on top of the dough leaving a 2 inch border. Fold the dough border over the filling to form an 8 inch round, sealing any cracks in the dough.

Bake the crostata until the crust looks golden and the jam looks full and bubbly. About 35 to 40 minutes. Remove from oven and allow to cool. If you wish, slide a spatula under the crostata to remove from the parchment paper. Sprinkle with nuts and cut into pizza slices.
