Pineapple Lemon Thumbprint Cookies

  

  • 1/2 cup Lu Austin's Pineapple & lemon Marmalade

  • 2 1/4 cups All-Purpose Flour

  • 1 tsp. Baking Powder

  • 1/4 tsp. Salt

  • 1 cup Butter (room temperature)

  • 2/3 cup Sugar

  • 2 Lg. Egg Yolks

  • 1 TBS. grated Lemon Zest

  • 1 TBS. Lemon Juice

  • 1 tsp. Vanilla Extract

 

  1. Preheat the oven to 350° degrees.

  2. Lightly grease 2 large cookie sheets.

  3. In a medium bowl combine the flour, baking powder, and salt.

  4. In a large bowl beat the butter and sugar with an electric mixer until light and creamy. Beat in the egg yolks, lemon juice, lemon zest, and vanilla.

  5. Add the flour mixture in half at a time and beat just until moist clumps form.

  6. Gather the dough into a ball. Pinch off the dough to form 1-inch balls. Place on the prepared cookie sheets, spacing 1 inch apart. Use your floured index finger or the back of a spoon to create a depression in the center of each ball.

  7. Fill each indentation with 1/2 teaspoon jam.

  8. Bake until golden brown, about 18 to 20 minutes.

  9. Remove from oven and let cool for 2 minutes before removing from cookie sheets.

  10. Store in a flat container with a sheet of wax paper between layers.

          Makes 4 dozen cookies.
